Fruit Tea Loaf

I love the Autumn time and this loaf recipe I’m going to share with you is the perfect autumnal bake.

It’s fabulous with a good cup of tea after the school run or a Sunday walk in the park with the family. It’s a hit with everybody in our house. So I hope you all enjoy it too!

It’s so quick and easy to make, just remember to soak the fruit the evening before you want to make it.

Ingredients

350g dried fruit, personally I use a mixture of raisins, sultanas and cherries.

• 350ml black tea

• 2 medium eggs, beaten

• 270g self raising flour

• 200g light brown soft sugar

• 1 tsp cinnamon

Method

1. The evening before you want to make your loaf, measure out the fruit and pour over the black tea, stirring well to combine.

2. Preheat the oven to 180 C/Gas Mark 4. Grease and line a 2lb loaf tin.

3. Add the rest of the ingredients to the fruity tea mixture and mix well together.

4. Pour into the prepared tin and bake in the oven for 1-1.5hrs. I usually check mine after 1hr and cover with foil to prevent the top getting over brown. It’s cooked through when a skewer inserted into the middle of the loaf comes out clean, if it has some mixture left on it, it need a bit more time.

5. Remove from the tin and leave to cool on a wire rack.

6. Serve thickly sliced with butter and a cup of tea and enjoy.
